Right CHARSET for French is

The correct charset for French in fr.php is iso-8859-1 which makes function convert2latin useless.

FYI.

(now I have to rewrite all my text and the fr.php file... :-(

well, you just need a right converter. perhaps this?

well, EasyPhp did that very well with a find/replace all feature :-)
