can I change some of the personal information fields on the orders page? I would like to change Street, Zip Code, City to Address Line1, Address Line 2, Address Line 3

any help much appreciated

Yep, you can you'll have to change the orders page - the orders print page and the check form js to accomodate the new names etc.
