adding fields to orders delivery

I know this has been covered elsewhere.. but the info is somewhat confusing to follow - one answer deals with adding info to dropdwn courier settings, not after that - another, deals with adding Nochex, Cheque, etc to payment option - not after that, another deals with product serial numbers -- (these were answered by bob, wowzone, prosam, and jo)

What I want to add; is a state field after the Zip code - (is there a really simple way to do this?) I just bought the paypal plugin, it has the standard fields in the orders-delivery and I need to add the state. Possibly Jo can steer me the right way, it has to be in the admin as well so the receipt/email will contain that info too.

Forgive me if this seems to be an ongoing thing, but I've tried all the solutions in this forum I've found, but I cant get it right....!
