I'm sure that it is possible. For version 2.2 extended I am looking for the same thing. Probably the code could be used for several versions. Meta data are essential for a good site, and it is unfortunately not available yet.
For the keywords I am using the search fields $aSearchFields[sSearchWords] , but that option only exists in the extended version so is not availablee for all versions of Quickcart. According to support, the best way would be adding a new db file. I tried many ways but kept getting errors.
So, what I would very much appreciate is some code examples of how to add three new fields in products admin and categories admin. The fields should be for meta title, meta description, and meta keywords.
There are quite a few files that need to be modified for this, including templates. If someone can spare some time to solve this meta tag issue with clear examples it would be highly appreciated. Maybe making a plugin would be possible and easier to implement.

paellaman - it is quite big modyfication and not easy to do, but I think that in new v3.0 it will be implemented.

I suggest that in this new version you also place the meta tag content in the image title and the alt tags for the links.
